Jerome Jouret En Avante Doute 2023 (750ml) ItalyThe vineyards are plowed by hand and have never seen chemicals. Yields are very low and the grapes are hand harvested at their maximum ripeness, destemmed and gently pressed. The wine ferments for 15 20 days then goes through elevage in wooden tanks. Zero sulfur added. Pairs beautifully with hard, salty, cheeses.
