We hand picked the Mourvdre fruit for this ros, tasting as we went, searching for bunches that showed the varietys distinctive juiciness, peppery spice and crunchy freshness. The grapes were only just turning red, so once pressed the juice had just a whisper of pale pink. The nose shows the subtle fruit flavours and pepper spice we saw

and aged in the bottle for ten years in a cool
